Honey whole wheat bread

  • 3/4 cup honey
  • 5 cups hot water
  • 2 Tbsp yeast (3 packets)
  • 1/3 cup oil
  • 1 Tbsp salt
  • 4-5 cups whole wheat flour
  • 4-5 cups bread flour

Put honey, hot water in a large bowl (I use an 8 quart pot) and sprinkle yeast over surface. Let rest about 5 minutes until bubbly. Stir water mixture and add oil & salt. Start adding flour using whole wheat first. Add white flour until too thick to stir. Turn out onto floured board and knead 5-10 minutes, adding small amounts of flour as necessary until soft but not sticky. Form into 4 loaves and put into greased bread pans. Let rise until doubled (about 60 minutes, depending), then punch down and rise again. Bake at 350 about 24 to 28 minutes.

Remove from pans immediately so the bottom doesn't get gooey.
