Put honey, hot water in a large bowl (I use an 8 quart pot) and sprinkle yeast over surface. Let rest about 5 minutes until bubbly. Stir water mixture and add oil & salt. Start adding flour using whole wheat first. Add white flour until too thick to stir. Turn out onto floured board and knead 5-10 minutes, adding small amounts of flour as necessary until soft but not sticky. Form into 4 loaves and put into greased bread pans. Let rise until doubled (about 60 minutes, depending), then punch down and rise again. Bake at 350 about 24 to 28 minutes.<br />
